Frozen Peanut Butter Pie

I'm clearly the dessert eater in this family and it's hard to find something I don't like or that I can call a favorite, since I LOVE it all! This pie is Dan's favorite dessert though. The last few times I have made this pie I have been a little peanut butter happy and it ended up being too rich. So follow the recipe!

Oreo pie crust
4 oz cream cheese
3/4 cup peanut butter
1/2 tsp vanilla
3/4 c brown sugar
4oz  Cool whip

Chocolate syrup or candies to top.

Mix all ingredients together. You may want to let cream cheese sit out prior to making for easier mixing. Try not to mix cool whip to much or it will disappear quickly. I even had to add more. Try to just fold it with other ingredients.

Top with candies or chocolate syrup and put in freezer.

Spicy Guacamole Burgers

Dan got the idea to make these burgers a few years ago when he had a house and a grill. Last summer, we were porchless and therefore didn't grill out much. But this summer, we have a new Weber and are ready to go!

Honestly you can do a lot with this recipe, so feel free to add your own marinades or ingredients to the guacamole.

Turkey or ground beef for burgers
Packet of dry spicy ranch dressing
dressings or condiments you like for marinade
Pepper jack cheese

3 ripe avocados
2 garlic cloves peeled
1 1/2 jalapeno peppers cored seeded and cut into 1/2 inch pieces
3Tbs fresh lime juice
3/4 tsp ground cumin
salt and pepper to taste
chopped tomatoes
chopped onion
fresh cilantro

Patty and marinate meat. Dan added a few extra ingredients so I can't tell you exactly how we made these, but basically we used the dry spicy ranch, soy sauce, sriracha sauce, and worcestershire sauce and let them sit for about a half an hour.

In the meantime get your grill lit up and ready to go.

Place garlic and jalapeno peppers in processor. Pulse. Add avocados, lime juice, and cumin. Pulse. Then process until smooth. Using a spatula transfer to a serving bowl. Add chopped onion, tomato, and cilantro. Mix with spoon. Taste. Add salt and pepper if necessary. Add sriracha sauce if you want an extra kick.

We recently received a food processor as a wedding gift and have been using it to make guacamole. But we have used this recipe without the processor before. Basically just stir and mash it together. Also, finely chop your vegetables.

Grill hamburgers, add cheese to melt before finished. Top with guacamole, lettuce and tomato!

This is a turkey burger in case you were wondering why the meat isn't brown. We have been eating turkey meat all summer and have been pleasantly surprised how great it tastes!

Baby Anna dress

A friend (and sorority sister) of mine recently had a baby this year.  Her daughter Anna, is just a doll! Seriously she is so cute! I have been wanting to make her a dress for such a long time, but wanted to wait until she was 6 months old and old enough for baby dress patterns to really fit her.

Last week I whipped up another seersucker dress, this time with a headband. Seriously baby dresses are SOOO easy! I sent the dress and Anna loves the headband so much she asks her Mommy to wear it everyday! :)
