I made some tasty banana bread muffins this weekend! They were so tasty I downed three right away. (Nom, nom, nom)  Fortunately they are relatively healthy, however next time I'm thinking of adding chocolate chips. Yum!

Banana Bread Muffins

  • 1 1/2 cups flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 3 large very ripe bananas
  • 3/4 cup white sugar
  • 1 egg
  • 1/3 cup applesauce

Mix first 4 ingredients (flour, powder, soda, and salt) in medium bowl. Mash bananas in a large bowl. Add sugar, egg and applesauce. Stir together. Fold in flour mixture, do not over mix. 
Scoop batter into 12 large lined muffin cups so they're almost level with the top of each cup. Bake on 350 degrees for 25-30 minutes!
