Pineapple Salsa and Spicy Tilapia

This is such an EASY dinner to make!

Serves 2
Pineapple Salsa
1 c chopped pineapple
1 tbsp finely chopped purple (red) onion
1 tbsp finely chopped red pepper
chopped jalapeno to your liking
chopped cilantro.

It's difficult to measure this out. I just guessed when making it.  I made this a few weeks ago with all fresh ingredients and it was fabulous!


sprinkle or rub fish with Cajun seasoning and olive oil. You can also use red pepper or chili powder.  Cook in frying pan until center is white and flakes.

Serve over rice!
